Guideposts are used for navigation and it's benefitial to interact with them when you don't have your map uncovered yet as they will always point to certain points of interest like villages.
They can be found only alongside paths, more specifically at crossroads. If you interact with them, you can read where do those paths lead. The destination they point to can be reached only by following the path - not by going straight towards that direction.
